Coffee Caramel Sauce

Coffee Caramel Sauce

Ingredients

1 pound granulated sugar
1/4 pound butter
2 pints heavy cream
1 tablespoon vanilla extract
1/2 cup very strong coffee

Method

Take a pound of granulated sugar, 1/4 pound butter, 2 pints of heavy cream.  Place in copper pan; blend well, and let cook until it reaches the consistency of fudge.  Add 1 tablespoons vanilla extract and 1/2 cup of very strong coffee.  Let simmer a while.  In order to test the consistency, pour a drop onto a buttered plated and feel with the fingers.  It should be quite firm but not hard, like chewy caramels.  The sauce should be served rather hot over good vanilla or {chocolate} ice cream.
