Date Pudding

Ingredients

2 eggs – well beaten
1 cups of sugar
1/2 cup of milk
1 pound dates
1 cups of nuts, pecans, or English Walnuts
2 heaping tablespoons flour
1/2 teaspoon baking powder

Method

2 eggs, well beaten, add 1 cup of sugar, 1/2 cup of milk, 1 pound dates and 1 cup of nuts – pecans or English Walnuts (grind dates and nuts), 2 heaping tablespoons of flour, and 1/2 teaspoon baking powder (mixed together).

Place in a hot oven (400-degrees). Turn down gas and bake very slowly, 45 minuts to an hour.

The above will fill an ordianly cake pan and will be about 1 and 1/2 inces thick when baked. It will serve 6 to 8 people. Serve cold, with whipped cream on top. (Will keep in ice box for a number of days.)
