English Muffin with Pork and Cheese Sauce

Ingredients

4 tablespoons butter
4 tablespoons flour
1 cup processed cheese (cheddar)
2 teaspoons prepared mustard
Smoked pork tenderloin
Eggplant, cooked in oil
Fresh tomato slices
English Muffins

Method

Make a sauce by melting 4 tablespoons butter, and blending it with 4 tablespoons flour.  Cook for a minute or two.  Add 1 cup processed cheese (Cheddar) and stir occasionally until cheese is melted.   Add 2 teaspoons prepared mustard.  Keep warm.

Lightly flour and salt slices of peeled eggplant, saute in 1-inch of hot oil until well browned. 

Stack slices of smoked pork tenderloin on toasted English Muffins, add a slice of cooked eggplant, a slice of fresh ripe tomatoes or canned tomato pieces, drained.  Pour cheese sauce over all, about 2 servings spoon to each tower.  Broil about 7-10 minutes, until brown patches appear.  

Serve at once and pour on more hot cheese sauce when served.
