Ingredients
Merguine Crust
- 5 egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1 1/2 cups sugar
- 1 teaspoon vanilla
Silver Lake House Filling
- 1/3 cup flour
- 3/4 cup sugar
- 2 cups light cream
- 2 well-beaten eggs
- Salt
Method
Meringue Crust
- Beat 5 egg whites until foamy; add 1/4 teaspoon salt and 1/2 teaspoon cream of tartar.
- Beat until egg whites stand in soft peaks.
- Add 1 1/2 cups sugar, very gradually, and keep on beating until egg whites are stiff.
- Flavor with 1 teaspoon vanilla.
- Grease well and flour a 9-inch pie plate.
- Spread meringue on the bottom, leaving it high around the edge and scooping out in the center, to form a shell.
- Have oven preheated to 400-degrees.
- Place meringue in the oven and turn off heat immediately.
- Leave in oven overnight – don’t peak.
- If prepared in the morning, allow meringue to remain in the oven (with the heat turned off) at least 4-5 hours.
- Before serving, fill with Silver Lake House Filling, and top with frozen raspberries or strawberries. Cut as a pie.
Silver Lake House Filling
- Mix 1/3 cup flour, 3/4 cup sugar, and a little salt, to 2 cups light cream, add 2 well-beaten eggs and beat together.
- Then beat mixture into dry ingredients gradually.
