Jell-O Fruit-Flavor Pound Cake

Ingredients

1 package (2-layer size) cake mix*
1 package (3-ounce) Jell-O Brand Gelatin, any flavor
3/4 cup water
1/4 cup oil
4 eggs
1 teaspoon grated lemon or orange (optional)**

Method

Combine all ingredients in a large mixer bowl. Blend; then beat at medium speed of an electric mixer for 3 minutes or until creamy. Pour into a greased and floured 10-inch tube or fluted tube pan. Bake at 350-degrees for 50 to 55 minutes, or until cake springs back when lightly pressed. Cool in pan 15 minutes. Remove from pan and finish cooling on a cake rack. 

* or use a pudding-included cake mix.
** or use 1/2 teaspoon almond extract

In high altitude area, for either cake mix, use large eggs, add 3/4 cup all-purpose flour. Increase water to 1 1/2 cups and reduce oil to 2 tablespoons; bake at 375-degrees.
