Fudge Nut Cookies
Ingredients
4 tablespoons shortening
1/2 cup sugar
1/2 cup corn syrup
1 teaspoon vanilla
1 egg
2 squares baking chocolate
2 cups sifted flour
1/2 teaspoon soda
1 teaspoon salt
1/2 cup buttermilk
1/2 cup chopped nuts
Method
Cream shortening and sugar. Beat in syrup and then eggs and vanilla. Melt chocolate, still wrapped in the top of a double boiler. Scrape melted chocolate from wrapper into the mixture and blend. Add dry ingredients alternately with buttermilk and beat well. Stir in nuts. Drop by spoonfuls onto greased cooky sheet. Bake at 350-degrees for 10 to 15 minutes.
This makes about four dozen cookies.
Honey ‘N Spice Cookies
Ingredients
1/2 cup sugar
1/2 cup (1 stick) butter or margarine
1 well-beaten egg
2/3 cup honey
2 1/2 cups sifted flour
1 teaspoon baking powder
1/4 teaspoon soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 teaspoon allspice
Method
Cream sugar and butter. Add well-beaten egg and hone and beat well. Sift in dry ingredients and mix into a well-blended dough. Roll out on well-floured dough board and cut into shapes or from dough balls and flatten into greased cooky sheet. Bake at 350-degrees for 12 to 15 minutes.
This makes about 3 dozen.
Molasses Cookies
Ingredients
1/2 cup shortening
1/2 cup sugar
1 beaten egg
1 cup molasses
3 cups flour
1/2 teaspoon soda
3 teaspoons baking powder
1 teaspoon salt
4 tablespoon buttermilk
Method
Cream shortening and sugar. Add beaten egg and molasses and mix well. Blend in dry ingredients alternately with buttermilk and mix into a dough. Drop by spoonfuls onto greased cooky sheets and bake at 400-degrees for 10 minutes
This makes about 7 dozen cookies.
