Giblet Gravy

Ingredients

8 tablespoons turkey fat
1/2 cup flour
Turkey broth
1 cup boiling water
Chopped giblets
1/2 teaspoon pepper
1 teaspoon salt

Method

Skim the fat from the broth around the turkey, or use butter. Place in a saucepan and add flour. Stir and cook over a flame until the mixture is browned; add the broth and water. Stir and cook until the mixture is thickened. Chop the giblets and add them to the gravy together with the pepper and salt.
