2 egg yolks
2 tablespoons cornstarch
1/3 cup sugar
3 tablespoons melted butter
5 large apples
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup top milk
2 egg whites
4 tablespoons sugar
1/2 tablespoon lemon or vanilla extract


Beat egg yolks until thick and lemon colored.  Gradually add the mixed sugar and cornstarch, then butter.  Add apples which have been grated just before adding milk, spices and pour into an unbaked pie shell.  Bake at 450-degrees for 10 minutes, reduce heat and bake at 350-degrees for 35 minutes.  Top with a meringue made with egg whites, sugar and extract and brown in a 325-degree oven. 

Variation: The meringue may be folded into the filling if desired.  use only about three and one-half apples and top with whipped cream.
