Amelia Island Mud Pie

Ingredients

Shell

5 ounces Oreo cookies
2 tablespoons butter

Filling

15 ounces chocolate ice cream
2 tablespoons ground coffee
2 tablespoons Sanka
2 tablespoons whipped cream
2 tablespoons brandy
2 tablespoon Kahlua
Fudge topping

Method

Crush Oreo cookies very fine and mix with butter. Press into a pie pan and place it in the freezer. 

Whip chocolate ice cream with ground coffee, Sanka, brandy, and Kahlua. Fold in whipped cream and place in shell. Return to the freezer until firm. cover surface with fudge topping. 

When serving top with whipped cream and a cherry.

Back in the early 1980’s, I was the Pastry Chef at Amelia Island Plantation and we received a request from Bon Appetit magazine for the recipe for our signature pie above. The chef came to me with the request and told me to cut it down to 1 pie, (we made 20 at a time!) and send it to them, but he told me not to give them the real recipe, but something close so they could only get the real mud pie from us. He had me add coffee grounds to it, which is NOT IN THE REAL PIES! And the proportions are all completely off. Sorry everyone, but he made me do it!! There should be 1 Tablespoon of Sanka (instant decaffeinated coffee) and 1 Tablespoon of baking cocoa which you add to 1/2 cup of heavy cream whipped and sweetened with sugar, and add 1 Tablespoon each of Kahlua coffee liqueur and of Brandy. When that’s whipped to soft peaks with all of the additions well blended in, cut the chocolate ice cream into small chunks and using the dough hook on a stand mixer, knead the ice cream and whipped mixture together until all of the ice cream is blended in. Immediately pour into chilled Oreo crust, spreading it to the edges of the shell and smoothing it off across the top. Place in the freezer for at least 4 hours. Have the Fudge Topping ready to spread and pull the pie from the freezer and spread fudge around covering the flattened center of the pie and immediately return to the freezer until ready to serve.
