Banana-Oatmeal Drops

Ingredients

1 1/2 cups sifted all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup shortening
1 cup sugar
1 egg
1 medium banana
1/2 teaspoon lemon juice, fresh, frozen canned
1 1/2 cup rolled oats
1/2 cup chopped walnuts

Method

Start your oven at 350-degrees or moderate. 

Sift flour, baking soda, salt, cinnamon, and nutmeg together several times. 

Work shortening and sugar together until you have a smooth, creamy mixture. Beat in the egg thoroughly. Now stir in the mashed banana and lemon juice. Start adding flour mixture gradually, stirring until all dry ingredients are mixed in well. 

Last mix in rolled oats and walnuts. 

Drop by teaspoonfuls onto greased cookie sheets (allow for spreading) and bake 12 to 15 minutes or until edges turn golden. 

Makes 4 dozen.
