Black Walnut Cake

Ingredients

1 package (6.5 ounces) pitted dates, cut in small pieces
2 teaspoons soda
2 cups boiling water

2 eggs, beaten
1/4 pound butter or margarine (soft)
2 cups sugar
3 1/2 cups flour, sifted

2 cups black walnuts

Method

Add soda to dates and cover with 2 cups of boiling water, let cool. 

Mix eggs, butter or margarine, sugar, and flour. After thoroughly mixed, add date mixture to batter and mix well, add 2 cups black walnuts and mix well again. Pour into greased tube pan. Bake in a moderate oven (350-degrees) for one hour. Let cool for 10 minutes before turning out of the pan. 

This cake is very moist, it can be baked several days before serving.
