Blueberry Muffins


1 1/2 cups flour
1 cup Wheat Hearts Cereal
1 cup sugar
2 tablespoons baking powder
1 teaspoon salt
1/2 cup firm margarine
2/3 cup milk
1 egg
2 cup blueberries (if frozen, thaw and drain)
2 teaspoons ground cinnamon

2 tablespoons sugar
2 tablespoons cinnamon


Heat oven to 400-degrees, grease bottom and sides of 16 medium muffin cups. Mix flour, cereal, 1 cup of sugar, baking powder, and salt. Cut margarine into flour mixture until mixture resembles fine crumbs. Beat milk and eggs slightly, stir into the flour mixture. The batter will be lumpy. Stir blueberries into the batter. Fill muffin tins 2/3 full. Mix 2 tablespoons sugar and cinnamon, sprinkle over batter. Bake until golden brown 20 to 25 minutes. 

Eat and enjoy!!! 



Wheat Hearts, produced by General Mills under the Better Crocker name are no longer sold, the closest substitute available today would be Cream of Wheat.
