Eggnog Pie

Ingredients

1 9-inch Graham cracker crust
1 1/3 cups evaporated milk
1 envelope unflavored gelatin
1/3 cup of water
2 eggs
1/8 teaspoon salt
2 teaspoons vanilla
Freshly grated nutmeg

Method

Chill 2/3 cup milk, a small mixing bowl, and beaters. Sprinkle gelatin over water to soften. Combine in a heavy saucepan eggs, sugar, salt, and 2/3 cup milk. Add gelatine mixture. Heat over low heat until the mixture thickens and begins to coat a spoon. Stir constantly. Stir in vanilla. Chill. Beat ice cold milk in a chilled bowl until stiff. Fold into chilled gelatin mixture. Pour into prepared pie shell. Sprinkle top with nutmeg. Chill until firm.
