Grated Apple Pie

A vintage typed recipe card for a Grated Apple Pie; make this Grated Apple Pie with egg yolks, cornstarch, sugar, butter, apples, cinnamon, and nutmeg then topped with a meringue made with egg whites, sugar, and extract. You may fold the meringue into the filling if desired and top with whipped cream.
Grated Apple Pie


2 egg yolks
2 tablespoons cornstarch
1/3 cup sugar
3 tablespoons melted butter
5 large apples
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup top milk
2 egg whites
4 tablespoons sugar
1/2 tablespoon lemon or vanilla extract


Beat egg yolks until thick and lemon colored.  Gradually add the mixed sugar and cornstarch, then butter.  Add apples which have been grated just before adding milk, spices and pour into an unbaked pie shell.  Bake at 450-degrees for 10 minutes, reduce heat and bake at 350-degrees for 35 minutes.  Top with a meringue made with egg whites, sugar and extract and brown in a 325-degree oven. 

Variation: The meringue may be folded into the filling if desired.  use only about three and one-half apples and top with whipped cream. 

Our most viewd apple pie comes from the Washington collection - Grated Apple Pie.  This pie can be topped with a meringue or you may fold the meringue into the filling and then top the pie with whipped cream.
