Ingredients
1 package compressed or dry yeast
1/4 cup lukewarm water
1 cup milk
1/2 cup shortening
1/4 cup sugar
2 eggs
1 1/2 teaspoon salt
3 1/4 to 4 cups of flour
Method
Soften yeast in water, scald milk, add sugar, salt, shortening, and cool to lukewarm. Add 1 cup of flour and beat well, then add yeast and eggs. Beat well. Continue adding flour until the batter is just right to handle. Let rise until doubled, about 1 1/4 hours. Turn onto a floured board and cut into small biscuits. Place on a buttered pan about 1.5 inches apart. Let rise to almost double then press down in the center, put in filling. let rise 15 minutes more and bake in a hot oven, about 40 minutes.
