Lemon Pie


1 1/2 cups sugar
3 egg yolks (well beaten)
1 tablespoon butter
2 tablespoons cornstarch
Grated rind of 1 lemon
1 1/2 cups boiling water
Juice of 1 lemon
{3 egg whites}


Stir sugar and cornstarch slowly into boiling water.  Add to beaten egg yolks.  Then add rest of ingredients.  Cook until thick, then pour into baked pie shell and top with beaten egg whites (3).
