Muffins, a classic popover recipe


2 cups flour
2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 egg, well beaten
1 cup milk
4 tablespoons melted butter or shortening


Sift flour, add dry ingredients and sift again. Combine egg, milk, and shortening; add to flour. Do not attempt to beat mixture until smooth, but when all flour is moistened turn into greased muffin tins. Bake at 425-degrees. 



This is more of a "Popover" recipe than a "Muffin" recipe.
