Oatmeal-Apricot Cookies

Ingredients

1 cup butter or oleo
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup flour + 1 tablespoon
1 teaspoon soda
3/4 teaspoon salt
2 1/2 cups Quaker oats
1 cup finely chopped apricots (can use more)
1 cup nuts
1 package (11-ounces) vanilla chips (I use milk chocolate)

Method

Mix butter/oleo and sugars together; add eggs and vanilla. Add in flour, soda, salt, oats, apricots, nuts, and vanilla chips and stir well.

Shape into 1 1/2-inch balls and flatten on a lightly grease pan; place about 2-inches apart. (I arrange like regular cookies).

Bake at 350-degrees for 11-12 minutes, until browned around the edges. Remove right away onto wax paper, cover with towel – cool.

Watch as they brown pretty quickly.
