Oatmeal Cake with Icing

Oatmeal Cake with Coconut Icing


1 1/2 cups hot water
1 cup quick oats (one-minute oats)
1 cup brown sugar
1/2 cup shortening (or one stick oleo)
2 eggs
1 1/3 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon soda
1 cup white sugar


Pour hot water over oats and let stand. Cream brown sugar and white sugar with shortening. Beat eggs into the mixture. Sift flour, soda, salt, and cinnamon; add all of the dry ingredients to shortening mixture and add oats; beating well.

Bake at 350-degrees for 35 minutes. Cover with oatmeal cake icing and place in oven or under the broiler for a few minutes. 

Oatmeal Cake Icing


1 stick oleo
1 small can of Carnation milk
1 cup brown sugar
1/4 cup white sugar
1 cup nuts
1 cup coconut
1 teaspoon vanilla


Mix 1 stick oleo and 1 small can of Carnation milk; add 1 cup of brown sugar and 1/4 cup white sugar. Cook for a few minutes and add 1 cup of nuts, 1 cup coconut, and 1 teaspoon vanilla. 

Punch holes in cake with an ice pick as soon as it is taken from the oven. Pour icing over cake and place under broiler for a few minutes.
