Peach Upside Down Cake

Ingredients

1/2 cup butter
1 cup brown sugar
1 can peaches
2 tablespoons pecans
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs, separated
1 cup sugar
5 teaspoons peach juice

Method

Melt butter in a 12x8-inch pan and spread brown sugar evenly in pan. Arrange peaches on sugar. Fill in space with nuts. Sift flour, baking powder, and salt. Beat egg yolks until light-colored, beat in sugar. Blend in peach juice, stir in dry ingredients. Fold in stiffly beaten egg whites. Pour batter over peaches. Bake at 375-degrees for 30 to 35 minutes. Let cook about 5 minutes. Turn upside down on a cake plate.
