Piccadillo

Ingredients

2 tablespoons vegetable oil
1 large onion, peeled and chopped
2 garlic cloves, crushed
1 pound ground lean beef
Salt, pepper to taste
1 large green pepper, cleaned and diced
1/2 cup raisins, previously plumbed in warm water
2 tablespoons drained capers or sliced green olives

Cooked white rice

Method

In a skillet heat oil. Add onion and garlic and saute until tender. Mix in tomatoes and cook for 1 minute. Add beef and continue cooking stirring with a fork, until the redness disappears. Season with salt and pepper and cook for about 20 minutes, stirring occasionally. Add green peppers after cooking for 10 minutes. Just before serving mix in raisins and capers or olives. Serve over rice.
