Spinach Parmesan

A handwritten vintage recipe for Spinach Parmesan; this recipe originally appeared in the December 1982 edition of Southern Living Magazine. Make this Spinach Parmesan dish with frozen chopped spinach, oleo, onion, sour cream, Parmesan cheese, lemon juice, garlic salt, and soft bread crumbs. Mix ingredients and spoon into a greased 1-quart casserole dish and top with bread crumbs. Bake, uncovered at 350-degrees for 30 minutes.

Ingredients

2 packages (10-ounces) frozen chopped spinach
1 tablespoon oleo
1/2 cup chopped onion
1 8-ounce carton commercial sour cream
1/2 cup Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon garlic salt
1/2 cup soft bread crumbs

Method

Cook spinach according to package directions; drain well and set aside. Melt oleo in a large saucepan. Add onion and saute until tender, remove from heat.  Add spinach and remaining ingredients except for breadcrumbs; mix well. Spoon mixture into a greased 1-quart casserole; sprinkle with bread crumbs. Bake, uncovered at 350-degrees for 30 minutes. 

Yield 6 servings.
