Waldorf-Astoria Red Velvet Cake

Ingredients

1/2 cup shortening
1/2 cup of sugar
1 teaspoon vanilla
2-ounce bottle red food color
2 teaspoon cocoa
2 1/4 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon soda
1 teaspoon vinegar

Method

Cream shortening and sugar, add eggs, and beat until fluffy; add vanilla. Make a paste of red color and cocoa, add to mixture. Add buttermilk alternating with salt and flour. Add vinegar to soda, but hold over a bowl as it foams. Blend into the batter. Do not beat hard. Bake 20 minutes at 350-degrees in 2 9-inch layer pans. Cool and cut each layer in two. 

Frosting

3 tablespoon flour
1 cup milk
1 cup of sugar
1 teaspoon vanilla
1 cup butter

Cook flour and milk until thick, cool. Cream sugar and butter and vanilla until fluffy. Add flour and milk mixture. Do not beat too long. Spread between layers and on top.
