Leota's Date Pudding

Ingredients

1 package dates (cut)
1 teaspoon soda (sprinkled over dates)
1 cup boiling water
1 stick butter
1 cup sugar
1 egg beaten
1 cup chopped nuts
1 1/2 cups flour
1 teaspoon vanilla

Method

Sprinkle 1 teaspoon soda over 1 package of cut dates. Pour 1 cup boiling water over this, then add 1 stick of butter and help it melt.  Combine 1 cup sugar, 1 beaten egg, 1 cup chopped nuts; add date mixture and 1 1/2 cups flour, and 1 teaspoon butter. 

Bake in a wax paper lined pan at 350-degrees, for approximately 45 minutes. (30 minutes in a toaster oven.)

 

Double Recipe

2 packages dates
2 eggs
2 cups flour
1 1/2 cup sugar
1 1/4 cup water
1 1/4 teaspoon soda
1 1/2 stick butter
1 1/2 cup nuts
1 tablespoon vanilla
