Orange Layer Cake

Ingredients

5 eggs
2 cups sugar
1/2 cup cold water
2 1/4 cups flour
2 1/2 teaspoons baking powder
1 orange, juice and rind

Filling:
1 orange, juice and rind
1 egg, white
1 cup powdered sugar

Method

5 eggs, (leave out 1 white for filling), 2 cups sugar, 1/2 cup cold water, 2 1/4 cups flour, 2 1/4 baking powder, 1 orange – juice and rind. Beat whites and yolks separately, add yolks to sugar and beat, then add whites, followed by orange juice and rind and water, lastly add flour with baking powder sifted twice. Bake in layers.

Filling: Juice and rind of 1 orange, white of 1 egg, 1 cup powdered sugar.
