Ingredients
2 bunches fresh broccoli, cut into spears (or two boxes of frozen -10 ounces each)
2 egg whites
1/2 cup shredded swiss cheese
1/2 cup real mayonnaise
Method
Cook broccoli just until tender, drain and arrange in an oven-to-table baking dish.
Beat egg whites and salt using an electric mixer until peaks. Fold in cheese and mayonnaise, spoon over broccoli.
Cook under broiler 4 minutes.
To make ahead: cook broccoli and make the topping. Do not put under the broiler or place under ??? until serving time.
