Ingredients

1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 cup margarine
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup shredded carrots
2 egg whites
1 cup rolled oats
1/2 teaspoon vanilla

Method

In a bowl, stir together flour and soda. In a large mixing bowl beat margarine with an electric mixer on medium speed for 30 seconds, add peanut butter, granulated sugar, and brown sugar; beat until fluffy. Add carrots, egg whites, and vanilla; beat well. Add dry ingredients to the mixture and mix well – stir in oats.

Bake on an ungreased cookie sheet in a 350-degree oven about 10 minutes. Makes about 48 cookies.
