Peanut Macaroons


2 egg whites
1 cup confectioner’s sugar
1/4 cup pastry flour
1/4 teaspoon salt
1 cup peanuts, coarsely chopped


Beat egg whites until stiff and dry.  Add gradually confectioner’s sugar, flour, and salt.  Fold in chopped peanuts.  Drop from the end of a teaspoon on a greased baking sheet about 2-inches apart and bake in a hot oven at 400-degrees for 10 minutes.
