Pineapple Dessert

Ingredients

1/2 pound vanilla wafers

1/2 cup butter
1 1/2 cup confectioner’s sugar
2 whole eggs, beaten
1/2 pint cream, whipped
1 #2 can crushed pineapple, well drained

Method

Crush 1/2 pound vanilla wafers (I use less – one box to a recipe – usually about 6-ounces to box). 

Cream together, until very fluffy: 1/2 cup butter, 1 1/2 cups confectioner’s sugar; add 2 whole eggs beaten.

Put half the wafers in bottom of a buttered oblong pan (glass). Spoon over this the butter, sugar, and egg mixture. Whip cream, add pineapple and spoon over butter mixture. Put remaining crumbs on top. 

Refrigerate 24 hours. Serves 8.
