3 cups diagonally sliced celery
3 cups water
1/2 cup wine vinegar
1 tablespoon chopped chives
1 tablespoon diced pimento
1 teaspoon dried leaf tarragon
1 teaspoon horseradish
1/2 teaspoon salt
Artificial sweetener to equal 6 teaspoons sugar
Place celery and water in medium saucepan, heat to boiling; boil 3 minutes. Drain.
Combine vinegar and remaining ingredients. Pour over celery in a medium bowl, mix thoroughly. Cover and chill.
Makes 3 servings.
