Ingredients
Step1:
1 pound ground beef
1/2 cup uncooked rice
1 egg, slightly beaten
2 teaspoon grated onion
1/4 cup tomato juice
1 teaspoon Kroger salt
1/2 teaspoon MSG or Accent
Step 2 & 3:
2 tablespoons butter or margarine
1/4 cup minced onion
1/4 cup coarsely chopped celery
1/4 cup coarsely chopped green pepper
1 10.5-ounce can Kroger tomato soup
3/4 cup water
2 teaspoons lemon juice
2 teaspoons brown sugar
1 teaspoon dry mustard
1/2 teaspoon Kroger salt
1 teaspoon Kroger tomato sauce
1 teaspoon Worcestershire sauce
2.5 quart casserole with a tight cover
Method
- Lightly grease the casserole, then combine and mix lightly the beef, rice, and remaining seasonings. Shape into 1.5 inch balls and put them into a casserole.
- Heat butter or margarine in skillet; add onion, celery, and green pepper. Cook (stirring frequently) until celery is limp.
- Remove from heat and add soup, water, and seasonings (stirring constantly). Simmer five minutes.
- Pour tomato sauce over meatballs, cover and bake at 350-degrees for 1.5 hours.
