Ingredients
2 Tablespoons peanut oil
1 tablespoons curry powder
1/4 cup soy {sauce}
1/4 cup creamy peanut butter
1/4 cup finely chopped peanuts
1 tablespoon light brown sugar
2 tablespoons lime juice
1/2 teaspoon crushed red pepper
1 clove garlic, crushed
1 pound boneless pork loin, 1-inch cubes
3 cups hot cooked rice

Method
Mix oil and curr, simmer over low heat two minutes. Gradually blend soy into peanut butter, stir in peanuts, curry mix, sugar, lime, pepper, and garlic. Add pork cubes, toss well to coat. Cover tightly, chill four hours or overnight.
Place three cubes on skewers, broil slowly 6-inches from heat or grill over coals, turning once, about 8 minutes. Serve with rice and sauce.
Serves 4
Peanut Sauce
Prepare just before cooking port. Heat 1 tablespoon peanut oil, add 2 tablespoons chopped green onions and saute until just tender. Stir in 2 tablespoons ground peanuts, 1 cup chicken broth, 1/2 tablespoon light brown sugar, 1/2 teaspoon lime, pinch ground ginger and tiny bit chili powder. Cook over medium heat, stirring constantly until mixture comes to a boil. Reduce heat and simmer uncovered fifteen minutes. Thicken as necessary with cornstarch and water.
