Ingredients
2 cups sliced onions
1/4 cup butter
5 cups fresh tomatoes or 3 cups canned tomatoes
2 teaspoon sugar
1 teaspoon salt
1/8 teaspoon pepper
2 cups sliced potatoes
6 cups boiling water
1 cup cream
2 teaspoon chopped parsley
Method
Cook onion gently in butter for about 1 hour, cover, and add tomatoes and seasonings. Simmer covered, for 20 minutes.
Add potatoes and water and simmer “over” covered, until the potatoes are very tender. Put soup through a strainer. Scald and stir in cream, add parsley.
