Prune Cake and Butter Icing

Ingredients
Prune Cake
- 1 1/2 cups sugar
- 1 cup oil
- 3 eggs
- 1 cup buttermilk
- 2 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup coconut
- 1 cup pecans
- 1 cup prunes**
Butter Icing
- 1 tablespoons Karo
- 1 cup sugar
- 1/2 cup buttermilk
- 1/4 stick oleo
- 1/2 teaspoon soda
Method
Prune Cake
- Bake in loaf pans at 300-degrees for 45 minutes or test with a toothpick.
- While cake is hot from the oven, have butter icing ready.
- Poke holes in cake with fork and spoon icing over cake.
Butter Icing
- Cook until thick.
- Spoon over cake just out of the oven.
- You have to stir this until it is thick and use a big pan as the soda will cause it to boil over.

Notes
** Interesting that the Prune Cake has no prunes in the ingredients. I’m guessing that is a mistake on the author’s part. I’ve added one cup of prunes to the ingredient list. Other recipes for Prune Cakes instruct you to boil the prunes and mash with a fork before adding to the cake batter.
