2 envelopes of plain gelatin
2 eggs, separated
3/4 cup sugar
1/2 cup milk
1 pound (2 cups) cottage cheese
1/2 cup cream whipped (or small can milk)
Cornflake or Graham Cracker Crust
Soak gelatin in 1/2 cup cold water.
Combine egg yolks, 1/2 cup sugar, salt, and milk in the top of a double boiler. Cook over boiling water until thick. Add gelatin. Cool. Add grated rind and juice of a lemon and ??? cheese. Beat egg whites stiff with 1/4 cup sugar. Fold meringue and whipped cream into cheese mixture. Turn into a 9-inch (square) pan lined with the crust.
Cornflake Crust: 1 cup finely crushed flakes, 2 tablespoons sugar, 1/3 cup melted margarine, 1/2 teaspoon cinnamon. Chill, sprinkle with orange rind or with cinnamon and sugar.
