Royal Creme Muffins

Ingredients

3/4 cup water (I use juice from Mandarin oranges below & water)
3/4 cup cream cheese, softened (I use fat-free)
1 tablespoon sugar
1/2 teaspoon almond extract
1/2 cup raspberry preserves
1/2 cup Mandarin oranges (small can), chopped
3 cups muffin mix (Krusteaz or homemade)
1/2 cup ground walnuts
1/4 cup poppy seeds (my addition)
2 tablespoons flaxseed meal (my addition)

Method

Preheat oven to 400-degrees. In a medium bowl, blend water (juice), cream cheese, sugar, and almond extract, preserves, and oranges. Add muffin mix and stir; then add seeds and flax meal. 

Fill muffin tins 2/3 full – Bake 18-20 minutes. 

Yummy!

Note – They don’t “brown” very much so be careful not to overcook.
