Ingredients

  • 2 medium onions
  • 1 tomato
  • 3 strips of bacon
  • Butter
  • 2 packages Minute Rice
  • 20 stuffed olives
  • Salt
  • Garlic salt
  • 1 cup boiling water
  • Dash of paprika
  • 1 tablespoon capers
  • 1 can pimento

Method

  • Cut bacon in small {} strips.
  • Slice onions very thin, then dice small.
  • Put bacon in a frying pan with butter, add onions and tomatoes cut very small.
  • Add salts after sauteing the above.
  • Add water and paprika, rice, a little at a time.
  • Add boiling water in center until it comes up on both sides of the pan.
  • Add capers, a little over a teaspoonful at a time, about 20 stuffed olives, 1 at a time.
  • Cover, let simmer at low heat add can of whole pimentos, spread over the top; add the juice.
  • Let simmer until ready to serve.
  • Serves 8 generously.
