Spiced Nuts 1
Ingredients
1 egg white
1 teaspoon water
3/4 cup sugar
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
2 cups walnuts or pecans
Method
Beat egg white with water until stiff. Combine spices in a second bowl. Pour nuts into egg white, toss to coat, then pour nuts into the spice mixture and toss again. Spread on greased cookie sheet, separating pieces as much as possible. Bake in a 275-degree oven for 30 minutes. Cool, separating nuts again if necessary, and store in an airtight container.
Spiced Pecans
Ingredients
1 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 cup water (little more)
2 cups pecans
Method
Boil to soft ball stage, stir in 2 cups pecans. Pour on buttered waxed paper. Separate with a fork.
Spiced Nuts 2
Ingredients
2 cups sugar
2 teaspoons salt
1 teaspoon ground nutmeg
3 tablespoons ground cinnamon
2 teaspoons ground ginger
1 tablespoon ground cloves
2 egg whites
2 tablespoons cold water
1 3/4 cup nutmeats
Method
Sift together 3 times the sugar, salt, and 4 spices. Beat egg whites slightly, add cold water. Put any kind of nutmeats in a wire strainer and dip them in the egg mixture until each nut is well coated. Drain well, then roll the nuts in some of the spice-sugar mixture. Spread part of the remaining sugar mixture 1/4-inch thick in a shallow pan and place the nuts on this, separating each one. cover the nuts with the rest of the sugar mixture, and bake in a very slow oven (250-degrees), for about 3 hours. Remove the nuts from the oven and sift.
