2 or 3 medium yellow squash
small onion, chopped
grated cheese (around 1 1/2 or 2 cups)
2 boiled eggs
1/8 pound butter
Cook squash until tender in salt water, drain. Place layers of squash in a buttered casserole dish, add butter, onions, pimento, cheese, sliced boiled eggs, salt, and pepper. Sprinkle top with cracker crumbs then another layer of same. Bake about 30 minutes in a moderate oven.
