Ingredients
2 cups (1/2 pound) grated, uncooked yellow squash
2 teaspoons grated onions
2 teaspoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup plus 2 tablespoons flour
2 eggs, beaten
2 tablespoons margarine
Method
Combine all ingredients except margarine. Melt margarine in a large skillet over medium heat. Drop squash mixture by tablespoonfuls into hot margarine. Cook until golden brown, turning once.
Yield: 6 to 8 servings
