Stuffed Zucchini

Stuffed Zucchini

Ingredients

6 medium zucchini, halved lengthwise
1/2 pound hot Italian sausage
1 small onion
1 clove garlic, chopped
1/2 cup Italian breadcrumbs
1/4 cup Parmesan cheese, grated
1/4 cup Mozzarella cheese, shredded

Method

Cook zucchini 10 minutes in salted boiling water.

Drain, scoop out insides of the zucchini,  leaving 1/4-inch in the shell.

Mash insides, drain well. Put shells in a shallow pan or baking dish. 

Remove skins from sausages, break up the meat and cook sausage in a skillet for 5 minutes. Add onions and garlic, saute until tender, about 3 minutes. Stir in mashed zucchini and bread crumbs. Spoon mixture into shells – sprinkle with cheeses. 

Bake 30 minutes at 350-degrees or until hot.
