1 pound skinless chicken breast halves, pounded to 1/4-inch thickness
3/4 cup light swiss cheese shredded

6 tablespoons milk
4 tablespoons Dijon mustard

3/4 cup bread crumbs
4 tablespoons Parmesan cheese
2 tablespoons tarragon


Place an equal amount of light swiss cheese on each chicken breast, roll the chicken up and dip/roll in the following: 

Roll chicken in milk and Dijon mustard mixture; then roll in bread crumb, Parmesan cheese, tarragon, and pepper mixture. 

Place in a sprayed 8×8-inch pan rolled side down. Bake at 375-degrees for 30 minutes, then uncover and bake 15 minutes or until golden brown. 

4 servings, 243 calories, 8 grams of fat.
