Sawdust Salad
A classic Southern vintage congealed salad recipe, that be used as either a sweet side salad or a light dessert for a heavy meal. This recipe calls for lemon and orange Jell-O, but you could use almost any citrus flavor.  Other recipes use grated cheese for the topping, but this recipe calls for coconut, which can be toasted - hence the name "Sawdust Salad". I will have to do a bake-off one day and post the results!

Ingredients

First Layer

  • 1 lemon Jell-O 3 ounces
  • 1 orange Jell-O 3 ounces
  • 2 cups hot water
  • 1/2 cup cold water
  • 1 large can crushed pineapple
  • 1 small package miniature marshmallows
  • {bananas}

Second Layer

  • 1 cup sugar
  • 2 eggs
  • 5 tablespoons flour
  • 2 cup pineapple juice

Third Layer

  • 2 packages Dream Whip
  • 8 ounces cream cheese
  • {1 cup milk}
  • {coconut}

Method

First Layer

  • Make Jell-O; add pineapple - cool - pour into 9-inch by 13-inch pan cover with sliced bananas - sprinkle with marshmallows (colored ones pretty) and congeal.

Second Layer

  • Mix - cook until thick - cool - spread over jello

Third Layer

  • Mix Dream Whip and 1 cup milk - add softened cream cheese.
  • Spread over the second layer and sprinkle with coconut.
