Zucchini Bread - Oregon


2 cups sugar
1/2 teaspoon salt
1 teaspoon soda
3 cups sifted flour
1/2 teaspoon baking powder
3 teaspoon cinnamon

2 eggs, beaten until foamy
2 cubes melted margarine
2 cups unpeeled squash, grated
3 teaspoons vanilla
1/4 cup nuts (or more, if desired)


Mix dry ingredients together and form a hole in the center of the mixture, then add 2 eggs beaten until foamy, 2 cubes melted margarine, 2 cups unpeeled squash, grated (does not have to bee too fine), 3 teaspoons vanilla, 1/4 cup nuts (or more). 

Mix well and pour into 2 greased loaf pans and bake at 325-degrees for one hour.
