Zucchini Bread - Indiana


1 3/4 cup sugar
3 cups flour
1 cup oil
1 tablespoon lemon peel or extract
2 cups zucchini squash, shredded
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon ( or 2)
3 eggs
2 teaspoons vanilla
1/2 cup nuts or raisins


[Combine dry ingredients, and mix in wet ingredients other than the vanilla, stir in zucchini, vanilla, and nuts or raisins last.] Pour into 3 loaf pans, bake at 350-degrees for 50 minutes.
