3 eggs, beaten – add:
1 cup oil
2 1/4 cup sugar
2 cups peeled & grated zucchini
3 teaspoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoon cinnamon
1/4 teaspoon baking powder
1 cup chopped walnuts.
Makes two loaves.
Bake one hour at 350-degrees.
