Zucchini Nut Muffins

Zucchini Nut Muffins


2 eggs
1/2 cup brown sugar
1/2 cup honey
1/2 cup melted margarine
1 teaspoon vanilla
1 3/4 cups flour
1 teaspoon soda 
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1 1/2 teaspoon cinnamon
1 cup granola cereal
1/2 cup chopped nuts
2 cups raw zucchini, cut up


In a large bowl, beat eggs slightly – add dry ingredients and butter {and honey} until moistened and stir in zucchini, granola, and nuts. Grease muffin tins; fill 3/4 full. 

Bake 350-degrees for 20-25 minutes. Test with toothpicks. 

Makes 18 muffins.
