Pickled Noodles
A vintage clipped recipe for Pickled Noodles made with rigatoni, vegetable oil, sugar, pepper, mustard, salt, vinegar, salt, finely chopped onion, cucumber, minced garlic, pimentos, and parsley.

Ingredients

rigatoni, or similar pasta

vegetable oil

sugar

pepper

prepared mustard

cider or distilled vinegar
1
tsp
garlic salt
1
onion, finely chopped
1
unpeeled cucumber, finely chopped
2
cloves
garlic, minced
pimentos
parsley
Method
Cook pasta as directed on package, adding vegetable oil to water.
Drain well and rinse with cold water.
Drain again.
Meanwhile, heat sugar, pepper, mustard, salt, vinegar, and garlic salt until sugar dissolves.
Add onion, cucumber and garlic and pour over cooked, drained pasta.
Refrigerate and marinate at least 48 hours.
To serve, garnish with parsley and pimentos, if desired.
