Pickled Noodles
A vintage clipped recipe for Pickled Noodles made with rigatoni, vegetable oil, sugar, pepper, mustard, salt, vinegar, salt, finely chopped onion, cucumber, minced garlic, pimentos, and parsley.

Ingredients

  • 1 pound rigatoni, or similar pasta
  • 1/4 cup vegetable oil
  • 2 cups sugar
  • 1 tsp pepper
  • 2 tsp prepared mustard
  • 1 tbsp salt
  • 2 1/2 cups cider or distilled vinegar
  • 1 tsp garlic salt
  • 1 onion, finely chopped
  • 1 unpeeled cucumber, finely chopped
  • 2 cloves garlic, minced
  • pimentos
  • parsley

Method

  • Cook pasta as directed on package, adding vegetable oil to water.
  • Drain well and rinse with cold water.
  • Drain again.
  • Meanwhile, heat sugar, pepper, mustard, salt, vinegar, and garlic salt until sugar dissolves.
  • Add onion, cucumber and garlic and pour over cooked, drained pasta.
  • Refrigerate and marinate at least 48 hours.
  • To serve, garnish with parsley and pimentos, if desired.
