Holiday Sweet Potato Surprise
A vintage clipped recipe for a Holiday Sweet Potato Surprise made with sweet potatoes, coconut-almond frosting, vanilla extract, ground cinnamon, and miniature marshmallows.

- 6 medium sweet potatoes
- 1 can coconut-almond frosting 15-ounce can
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2 cups miniature marshmallows
Cook sweet potatoes in boiling water 20 to 25 minutes or until tender.
Drain and cool.
Peel potatoes and mash.
Combine mashed sweet potatoes, frosting, vanilla, and cinnamon; mix well.
Spoon into a greased 12x8x2-inch baking dish.
Bake uncovered at 350-degrees for 18 minutes.
Sprinkle with marshamllows; continue baking 5 minutes or until thoroughly heated.
