Holiday Sweet Potato Surprise
A vintage clipped recipe for a Holiday Sweet Potato Surprise made with sweet potatoes, coconut-almond frosting, vanilla extract, ground cinnamon, and miniature marshmallows.

Ingredients

  • 6 medium sweet potatoes
  • 1 can coconut-almond frosting 15-ounce can
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 cups miniature marshmallows

Method

  • Cook sweet potatoes in boiling water 20 to 25 minutes or until tender.
  • Drain and cool.
  • Peel potatoes and mash.
  • Combine mashed sweet potatoes, frosting, vanilla, and cinnamon; mix well.
  • Spoon into a greased 12x8x2-inch baking dish.
  • Bake uncovered at 350-degrees for 18 minutes.
  • Sprinkle with marshamllows; continue baking 5 minutes or until thoroughly heated.
