Holiday Sweet Potato Surprise

Ingredients
- 6 medium sweet potatoes
- 1 can coconut-almond frosting 15-ounce can
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2 cups miniature marshmallows
Method
- Cook sweet potatoes in boiling water 20 to 25 minutes or until tender.
- Drain and cool.
- Peel potatoes and mash.
- Combine mashed sweet potatoes, frosting, vanilla, and cinnamon; mix well.
- Spoon into a greased 12x8x2-inch baking dish.
- Bake uncovered at 350-degrees for 18 minutes.
- Sprinkle with marshamllows; continue baking 5 minutes or until thoroughly heated.
